Angel of Heaven; specifically, a Principality.
According to the Wikipedia article on the hierarchy of angels, technically principalities are third sphere angels that should be above archangels. However, in Good Omens canon, canonical archangels (Gabriel, Michael, Uriel) are actually Aziraphale's superiors. We do not know of other possibly changes to spheres, despite the presence of two other angels.

There are some fandom headcanons that Aziraphale could be a former cherub, as they are stated, in theology, to have been the actual guardians of the Garden of Eden. I personally don't play this headcanon and play him as always having been a principality.

As an angel, Aziraphale doesn't actually have a gender. He is canonly only seen presenting as male and going by He/Him pronouns. Unless stated otherwise, you can safely assume this as default. This may change!

Unless otherwise stated, Aziraphale keeps this look and this outfit. Besides any plot reasons, outfits may vary during time period, but he usually keeps his corporation. I will play him with different looks, but I'll describe as much.
(AU versions and true form headcanons are different, of course, and I can provide visual or written references.)
✦Fashion

Aziraphale, in modern human standards, always seems to dress a little bit out of time. This seems to have started early on his time on Earth, including Mesopotamian times. His attire is almost always high end fashion regardless of the time period.
Presently, between the early 2000s and 2019, he's seen wearing an outfit mostly taken out of the Victorian era, the more modern item seemingly being his bow (not seen during the 1960s). Pictures shown in the Visual field.
✦Olfactory
Non-magical: Cologne, mainly. Possibly dust and old books/leather. Tea, cocoa, sweets. (Headcanon that he smells like petrichor if there's any extensive use of angelic powers.)
Magical: He's an angel, so if your character can smell angels, then there you go! That may vary by character.
✦Demeanor
Aziraphale immediately comes off as very polite, very posh, and rather soft spoken. He holds himself rather straight, impecable posture, and seems rather approachable for the most part. Sometimes a tad anxious and nervous.
He will easily listen to someone's troubles and is rather softhearted and kind, even to a fault. He seems to have trouble reading sarcasm, to know when he's being lied to or manipulated, and to take indirect hints.
He can also be a little petty if the situation calls for it, but usually that's reserved to more personal conversations and interactions (read: with Crowley).
Sometimes he's rather impulsive, specially in stressful situations, pushing right through the anxiety and taking rather drastic measures.
Will sometimes talk with his hands, though he's got the habit of keeping them still. Fidgets and paces when nervous.

✦Mental information
It's sort of difficult to imagine what an angel's mind must look like! While Aziraphale is very human-like, I'm sure the inside of his mind is not. So who knows what cosmic energies one might find in there. Good luck.
✦Magical information
An angel! Who can do literal miracles and rides around in a Heaven-given corporation (well, not anymore, but that's spoiler territory).
To characters that can sense supernatural energies, he'll surely feel very powerful. To those who can specifically sense angelic or holy energy, it'll be very clear. If your character can sense something but doesn't quite know what an angel like Aziraphale is, we can probably find a middle ground that works for them.
Aziraphale's main canon power is the ability to literally create miracles. The limits of this power, if any, are never truly explained, beyond those of the emotional/mental variety of the character himself.
Canonly, between the several versions of the story, he's seen and implied to do all sorts of things, from miracling up objects, to reviving dead animals, to setting paper on fire, to stopping a baby stroller in its tracks, to creating smells, to even controlling humans directly (by giving them the idea of something they forgot to do, or making them wake up from from being frozen in place with no memory of the events just seconds ago), or even teleporting them somewhere so unspecific even he doesn't know where it is. There's really no explicit limitations to this.
Aziraphale can also do things like sense/smell demonic beings, and sensing the feeling of Love (beyond just the romantic), to the point it can stagger him if it's too powerful.
He can heal wounds and create light.
He can possess humans when he's incorporeal, and even trade corporations with other creatures like him.
Gathering from what other angels and even demons can do, one can assume that Aziraphale can also: teleport himself, turn any size, change his shape, etc.
He doesn't actually have physical limitations, but sometimes forgets. Call it Earthly influence.
Having fought in a war and even, possibly, led some angelic troops, it's safe to assume he's also at least somewhat experienced with sword fighting.
As an angel, he is weak to Hellfire (will actually fully destroy his essence) and possibly other demonic things.
( Seeing as his powers and immense and quite vague, we can discuss what they entail as it's relevant to any plots.)

Sure. He will react accordingly, which, unless he's in a relationship with the character, will probably be polite surprise.

Yes. He will probably not notice for the most part and take things a tad too literally. Unless he's already in a relationship with the character, he might be uncomfortable with very blunt flirting when he notices.

Yes. In relationship, he will most likely enjoy it. Not in relationship, he will probably be shocked and react accordingly.

Yes. He will avoid fighting at all costs, but I'm into it.

Lets discuss it. Trying to mind-read an angel might royally h*ck up a character that isn't at the same level of power, and even those that can handle it, it's probably a weird mess in there.

He's not exactly a weak creature, so lets keep that in mind. Lets plot it out.
✦Possible character-based triggers
He's an angel, so there's the whole theology thing and discussion of religions, events, etc. Also Heaven in Good Omens relies a lot on a fear and indoctrination angle, so it might come up, mostly in descriptions (as opposed to character lines).
Aziraphale also lived through all of human history (from a creationist perspective) and has seen a lot of things, which he won't see as much horror as a human would. I will always try to keep it respectful from a player/mun angle, but like the other subjects, it may come up. If anything that's said makes you uncomfortable, feel free to tell me and I'll edit/delete as preferred.

I really only ship him with Crowley, which ever version that might be (show/book/radio), and occasionally alude at a possible romantic involvements with other people (rarely), but otherwise am not really interested in other ships. But feel free to make suggestions.

Myep. Do keep in mind that I play him (by default) as not having a *particular* active running interest on it nor having had experience in the past. This goes for the canon version and can easily be adapted to different plots. I do also play him as being rather open to experimenting with things once this becomes part of his romantic life! I write him as something close to asexual/demisexual.
He also doesn't usually keep genitalia unless it's relevant, and will vary according to however the smut plot might go.
All of this can be discussed and changed along with plots, and AU versions have different histories. Lets talk it out.

Most things? Any physical configuration, including lacking any genitalia and even any form moving towards true form, any gender presentation, most locations, etc.
Personally I like a lot of fluffy things, silly things, hurt/comfort, ~journey of discovery~ stuff. But smut without plot is good too!

While I personally don't have subjects that will have a triggering effect, I mostly ask for respect. Rather not play any threads that refer recent real world tragedies, but you may ask beforehand. This is a character that has lived through the entire development of Earth and there are even references to actual historic events in canon, but I refuse to make light of situations that hit too close to home. When in doubt, ask.
I understand the separation between player/mun and character/muse, so I understand that a character's views might not reflect the player's. If your character has ignorant or bigoted views on anything and it comes up in canon, I'll probably handle it just fine, but do put up a warning or ask me first, specially if we don't know each other.
